Ham and Asparagus Fettucini

Ham and Asparagus Fettuccini

Prep Time: 5 MinutesCook Time: 15 Minutes
Ready In: 20 MinutesYields: 4 servings

INGREDIENTS:
12 ounces dry fettuccini noodles
8 ounces fresh asparagus, trimmed and cut into 2 inch pieces
1/2 cup butter
2 cups heavy cream
3/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
1 pinch cayenne pepper
1/2 pound cooked ham, diced

DIRECTIONS:
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Stir asparagus into pot in the last five minutes of cooking; drain.
2. While pasta is cooking, heat butter and cream in a medium saucepan over medium heat. When mixture begins to bubble, stir in Parmesan, garlic powder, pepper and cayenne. Continue cooking until mixture thickens, stirring occasionally. Stir in ham and heat through.
3. Toss pasta and asparagus with sauce and serve immediately.

* All I changed was the amount of spices- I doubled the garlic, pepper and cayenne. But I tend to do this pretty quickly. The result was absolutely fantastic! *

Hi Alanna;

I just made this amazing pasta dish last night and I thought I would share it. When I origanally saw your site the only thing I could think of was Fettucine Alfredo but that's what you already have. I must try it with asparagus next time though!:)

Anyway, it's another pasta dish, hope you and your readers don't mind.

Sausage, Spinach and Feta Pasta

1 tsp oil
4 sausages, cut into 1/2 inch pieces

1 tbsp oil
1 red onion, diced
3 cups tomato, diced
4 cups spinach
1 1/2 tsp basil
1/2 cup feta cheese
pepper to taste

Heat oil in big frying pan and fry up the sausage, about 10 min until heated through. Remove from pan with slotted spoon and put on paper towel. Drain the pan.

Heat second amount of oil in same pan and cook the onion until see- through. Add tomato, spinach and basil. Heat through until spinach just starts wilting.

Add the sausage, feta and pepper and toss together, heating for about 2 minutes until cheese just starts to melt.

Meanwhile, cook up some pasta.
Makes enough for 4 people, with a little leftover.
